You will see a "Bonus" message appear when you merge 5, not a huge bonus for low items, like calves and kids, but the bonuses stack up when you merge 5 large gems or 5 large gold coins. Not a loss in XP as such, just slows you down a bit.
Also, when you first start playing, space is always at a premium. In the beginning, just merge 3, otherwise you'll run out of space to store items!
