Yes, but Sushi is still more seen in the US, they sell it at grocery stores and gas stations, where as Tartare is just not widely eaten in the US as raw beef isnt a norm here vs European and Slavic countries. Tartare is also pretty expensive in the US, so it's not really something the average person would get tbh.

I like shakshuka (Turkish way of cooking egg w/ tomato sauce). I needed carb and I have mozzarella cheese. So I decided to experiment. The egg yolk added creaminess to the sauce. Complemented with the cheese.

I love using it in curry because the texture and flavor goes so well with the spices. It’s like the fenugreek and turmeric pops. And it basically melts in your mouth. But I always use a trick after cutting it where I toss it in kosher salt and let it sit 20-30 minutes. Then I rinse off the salt and it tenderizes the aubergine and leaches out the bitterness leaving behind a delightful unami

I thought it would be fun to keep the theme, so I used purple and green onions instead of yellow and roses in some fresh basil. I didn’t have coriander, so I used parsley instead.

I do it more Korean style than Szechuan style though because it’s really hard to get chili bean paste where I live. I use gochujang and garlic black bean paste where I live. And it’s hard to get Szechuan peppercorns so I use lemon zest, coriander and black peppercorns as a kind of substitute to give you a similar flavor profile, but unfortunately it doesn’t have that tingly numbing sensation that the Szechuan peppercorns have. But it tastes so good the way I do it and its very similar. I also make my own hot chili oil

Decorating is fun, however, taste is superior in my book. If it tastes good, I can overlook most anything in terms of decorating. That said, those cakes look pretty cute!
