Does your monitor support 120 over hdmi? Some only support that over display port.
Then in Fortnite you have to also enable it:

I just enabled the 120hz option in the settings on console
Fully quit Fortnite, eg if it is in quick resume remove it, the. Restart your console, then try again

Please verify your Xbox model... Xbox **One **S generally doesn't support 120Hz gaming.
Funny one but I changed my option to 120hz

If you believe Fortnite is supposed to support 120 Hz gaming on the console and the option isn't showing, I'd contact Epic.
That said, just because the console supports output at that resolution or frequency absolutely doesn't mean games will support it, and the Xbox One S is a very underpowered console.

No idea, but I don't think you'll have any luck. Epic's own support pages make no mention of Xbox One or PS4 120 Hz support:

Done what? You said you have an Xbox One S. According to the article, Fortnite doesn't support 120 FPS on Xbox One S. There's nothing to do.

If you’re talking about GTA 6, I don’t think they announce the fps.
