is there a code with the disc?
#I own Far Cry 5 normal edition digitally, but have a physical copy of Gold Edition.

There is usually a code in the box that gives you the DLC. You can just enter that and not need to do anything else.
If not, put the disc in and it should let you install any additional content without needing to delete the current install.

If you bought a pre-owned copy then it means the previous owner used the code.

The discs are usually just the standard edition of the game and the code gives you the additional DLC.

I mean i'm borrowing the game from my father so idk what he did with it when he had it lol.
But do you think if I uninstalled my currently owned game on my console and installed it with the disc. It would do something? Or should I drop it.

Nope, that won't make any difference.
Ask your Dad to put his account on your console and set it as the home console and then you'll get access to his games and DLC.
Assuming you live in the same house together.

There would be an issue because it violates Terms of Service to do this with people who you don't live with.
