So if I have 2 different xboxes with the same account, and I play, for example, rdr2, will the progress I made on xbox series x 1 transfer to xbox series x 2 through my account? So I can just play on either console with the same save?

Yes, all your saves are tied to your account and automatically back up to the cloud. When you sign in to another console and launch a game, one of the first things it does is go to synchronize your save between the cloud and the local console.
