I get that feeling. My backlog is huge and I just bought a bunch more games recently (the entire Van Helsing series, Vampires/Shadows of New York, Grapple Dog, Adventures of Chris (omg this game is hard lol), Rad Rodgers and a bunch of others).

Van Helsing 1 seems to be the easiest of the three, because it doesn't (as far as I can tell) have an achievement tied to playing a hardcore character. Coteries, while being a VN (not usually my type of game) is less annoying them most VN games because I love everything VTM.

But I screwed myself and now have to do a fourth playthrough cuz I wasn't rude enough to fail the recruitment of the Nosferatu in my first full play through. LOL

And that was a Visual Novel. :/

As you were told already, PC versions don't need to go through a review process. The devs/publisher can release an update whenever they want.

Console games require a review process before the update can be made available. This takes time - the testing you say doesn't happen.

In some cases devs may wait a while before submitting a patch to include more fixes that are planned so they can get everything done in one go. Whereas on PC they can release smaller updates more frequently.

Testing on Xbox side doesn't guarantee a game won't release with bugs. That's for the developers to deal with, not Xbox. Xbox don't make the game. Xbox testing and certification is focused on different things.
