I just play classes I enjoy and are relatively viable. Nobody can really tell you what is the most fun since we all enjoy different things. For example, I love resto druid and hate boomkin.
I suggest,specifically in the realm of m+ trying out:
Healers: Paladin,rdruid, and priest. These all seem the most fun imo and do fairly good/best healing.
Melee dps: Rogue, enhancement shaman, ret paladin
Ranged dps: shadow priest, ele shaman, mage, hunter
Tanks: guardian, vengeance, prot paladin.
Bonus points being a venthyr shadowpriest/enhancement shaman/hpal for dungeon buffs

I have figured out though, that if you goto the next floor, and your boostee dies on the previous one and releases... It spawns on the new floor. But it will cost you a death per floor that way
