im currently bouncing between the cosmere and robin hobbs "realm of the elderlings" but i wouldnt recommend realm of the elderlings because it does have some confusing writting, i have to re-read certain sentences to understand it fully, so as a non english speaker it might be a bit taxing

@craggy sonnet mistborn definitely a good place to start. i'd also easily recommend warbreaker, tress of the emerald sea or yumi and the nightmare painter. if you're cool with novellas, you could also check out the emperor's soul or shadows for silence in the forests of hell. most of the earlier cosmere stuff can be read standalone as long as you read the individual series in order.
abercrombie's the first law is great, but i would read a handful of other books/series before reading it. if you want something of his that came out that's a nice easy read, he put out the devils last year, it's a fun, genre-heavy page turner. i've been recommending it to everyone. bit of a doorstopper, but once you're out of the starting gate it breezes by
nance mentioned david eddings, who definitely isn't modern, either in style or time, but managed to both kill and crystallise traditional fantasy by compressing it into the belgariad, a basic but very fun epic fantasy series (if you ever read eragon you'll spend most of the series shocked that paolini never got sued). a lot of modern fantasy is coloured by his work, either through reference or contrast.
if you want something incredibly edgy, you could try mark lawrence's broken empire trilogy. it's about a kid who was left for dead and decides to make it the world's problem. i cannot overstate how edgy this thing is, maybe look up some content warnings if you have anything that you really don't want to read
i can't remember what the prose level was like, but if you'd like a slightly less edgy read, there's scott lynch's the lies of locke lamora, a book about a heist going the way all fictional heists do.
if you want a book about a young child with a neglectful home life attending a magical boarding school, you could read the scholomance. the first book reads a bit too much like a response to harry potter for my liking, but it's pretty decent.

Depending on how much I'll like Mistborn, I would certainly pick up the newer standalone Hoid stories from the Cosmere before commiting to another big series (also heard that Era 2 may not be as good as Era 1?) from Sanderson.
What is it that makes you not immediately recommend The First Law series? Most definitely interested in reading something from Abercrombie in the not too distant future, because I've heard he creates some of the most intriguing characters in fantasy. Is the new Devils series connected in Universe to the previous 2 trilogies?
Broken Empire is on my list but rather on the far end of it. I am not extremely enticed by the prospect of it but certainly would wanna give it a shot once I am more settled into the genre (or maybe not if I realize along the way that this direction may not be what I enjoy).
The Lies of Locke Lamora aka Gentleman Bastard series is high up on my shortlist!

I wouldn't recommend the first law when you're starting out because it probably isn't going to satisfy the way other stories would. It's very much a brief, if eventful, slice of a world's history and a character study of some of its major players for that time. And I love it for that, but it would annoy me if I was getting back into reading and encountered that kind of narrative philosophy
