Ek'katcha (beetle, Thri-kreen) Race, what do you think?

I though of the cy-bugs from wreck-it-ralph mixed with the Thri-kreen. I am not sure if it is balanced. how good is action, 1 minute flight?

Very solid. Only change I'll suggest is switching to 13 + Dex armor, especially as that brings the race into the suggest 27-31 range.

Some people suggested a change to Absorption Consumption to remove the ASI changes, make it non-physical resistance and make it last until your next long rest. What do you think of that? I think I will change it because Thri-kreen have natural armour that is 13+Dex.

ASI is a good call cause' changing ASIs mid-combat slows things down too much

Some people also wanted me to add languages, you think this is a better version: Absorption Consumption. You can devour creatures and mimic part of their essence. If a creature with a CR equal to or lower than your level dies within your melee attack range, you can devour part of it as a reaction, and you gain part of its essence. If it doesn’t die within your melee attack range, you have until the end of your next turn to devour part of it as a bonus action. Once you have done this you gain one of the following effects of your choice:
You gain one special sense of your choice, except truesight, that the creature possessed, out to the same range.
You learn every language the creature knew, except telepathy.
You gain resistance to one non-physical damage type of your choice to which the creature had resistance or immunity.
You gain immunity to one condition of your choice, except exhaustion, to which the creature had immunity.
These effects last until you take a long rest. Once you use this trait, you cannot do so again until you finish a long rest.

languages aren't as astrong as the other ones, I'd add something else on top or fold it into another option, otherwise solid

I'd also change the resistance's wording to "... to one damage type other than bludgeoning, piercing, or slashing, of your choice..." to be safe

Should I allow them to gain the telepathy of the creature out to the same range. If I do that should it be limited to telepathy under 1mile?

beyond that it starts breaking stealth, social encounters, etc

This race already has telepathy to 60ft. That wouldn’t really work. What about you can prob the things memories from the last 24hours

What about this: You learn every language the creature knew, except telepathy. In addition you can probe the creatures mind, as if under the effects of the detect thoughts spell.
You immediately learn what their surface level thoughts and gain insights into their reasoning, emotional state, and something that loomed large in their mind, all within the last hour.

You have to reword so you aborb their memories rather than probe them to obtain them, as they are, well, dead.
