It's basically just changing the license key that microsoft office is activated with, then setting some stuff up so that office doesn't try too hard to check if it should be activated or not.
Worst case, it just messes up how office works ever so slightly.

The specific options in the video ensure that office is permanently activated, and won't check if the account tied to it owns office.
If you want to undo it, then follow the video, but where the video gives "1" as an input on the Ohook activation screen, press "2".
