As far as I know, there's no where to ensure that mistral OCR is being used

I just noticed that the request is more expensive than without mistral-ocr. That could be a clear indication of it.
It's hard to determine whether the recognition rate is better than before, since it was already very good with gemini 2.5 flash (and without mistral).

You can make your own benchmark to compare the 2, or you can look up benchmarks on document understanding/extraction for mistral OCR and compare them to the benchmark results for Gemini 2.5 Flash
