if you use gpt-4o, you'll be using the latest version openai recommends you use
if you use chatgpt-4o-latest, you'll be using the version closest to what's served on chatgpt.com

If you hover over the info icon on the provider on a model, it'll tell you what is the underlying model that OpenRouter is calling on that provider. Then you would need to refer the provider's docs as to what the model name means (https://platform.openai.com/docs/models/gpt-4o)
