Every time I open zen after quitting, I have to go to about:profiles and launch my profile with my actual tabs and data. How do I set it to be the default?
My OS: Endeavour OS (Arch based) + hyprland

That profile selection during startup are the new style Firefox profiles (which are part of profile groups). What you select via about:profiles is the older style profiles. The new style is not enabled in Zen by default and that is for a reason.
You can right-click the desktop icon for Zen and then pick "open the profile manager", here you should be able to pick and set default the profile (old style) you now select via about:profiles.

Okay so the thing is I was using zen on windows and backed up the zen folder from there which contained all the profiles, tabs and settings. On windows choosing the profile from the new style profiles menu did work properly. Now I'm on linux and placed the backed up zen folder in the files

moving profiles between OS's is a bit tricky. For the new profile groups there's also config files in the folder hierarchy higher up.
to copy a profile over it's often advisable to not copy over the profile folder itself but rather create a profile on the target side and then replace the contents with a copy of the folder content of the source machine.
and even then profiles have OS specific settings that when they've been initialised for 1 don't work well on the other. So it can be a better idea to only selectively copy over cookies/bookmarks/sessions
