you can just stop questing, yes. There are specific chains you need to do in order to unlock content, but otherwise you aint gotta do anything
in terms of levelling an alt, you can purely run through dungeons from 15 - 120 without touching quests
then once you hit max, unlock the stuff you need and carry on
Warlords of Draenor will have a chain to unlock a garrison, Legion will have a quest chain for an artifact weapon which you should do, BFA will have a few that are required for end-game content and other things

I'm a bit confused about drops from Dungeons. I've played 2 dungeons. (I'm level 33 undead warrior. That's my only character) I've played blackfathom Depths, and I've played Scarlet Monastery. As far as the normal little enemies and ads go, I only sometimes get a drop, and it'll be something like Silver or Cloth. Is that normal? Also, as for the bosses, sometimes It will say items at the top of my screen but they won't be given to me, instead in the chat I'll see it was given to my teammate. Otherwise, sometimes We'll kill a boss and the chest behind them won't give me any items or weapons. Is this normal?

How time consuming a game is it?

How time consuming: Depends on how you play, casually or hardcore? If you play hardcore you will be constantly grinding for better gear, better corruptions ( late game things ), and stuff. If you play casually, it can still be pretty time consuming if that's what you're looking for.

tank is a very important role in dungeons and raids and alot of people look for tanks
also some servers are filled with either horde or alliance so just make sure u pick the right one

all the classes can be a tank are : Warrior, Death Knight, Paladin, Monk, Druid and Demon Hunter i'm pretty sure
Druid can actually be all roles, A Tank, A Healer, A Ranged DPS, and A Melee DPS
each of those roles are a different spec though.

Some races within the factions also have unique languages that others cant understand. So Trolls can speak zandalari and Orcs cant understand it

Levelling areas are not representative of an actual player population. They congregate in their respective faction capitals (Orgrimmar for Horde and Stormwind for Alliance) and in areas relevant to the current content (Zandalar and Kul Tiras).
