You're not level 80, you're not fully geared, and you don't have access to all of your hero talents. Builds aren't optimized during the leveling stages. Don't worry about your dps when you're below max and not geared

I would also compare how you're playing off of what's recommended on your class and spec guide, and adapt it to your playstyle as-needed

At its easiest you're just slapping lighty uppy buttons, and tanks never/rarely die in open world content or while leveling, and you don't need to worry about choosing the wrong pet for content or managing your massive toolkit of utilities

Paladin, likewise, for emergency heals and bubbles and for access to all three specs

Druid can provide a player with examples of all three party roles and even all four combat types

That would be classic/Vanilla. The Vanilla content got revamped when Cataclysm released so questing through Kalimdor/Eastern Kingdoms via Cata Chromietime would take you through that content but with the cataclysm twist. some quests are no longer available, plenty of additional cata quests are introduced, etc. if you want to play it chronologically in the correct way you would have to play through wow classic era.

But i can see you're a beginner (atleast judging by your badge) so let me tell you that playing through all of the content in order is not intended for new players at all. You are supposed to catch up as fast as possible and play through the current content. afterwards you can go back and play the quests if you still want (and you will earn the loremaster achievements for it). First you should learn the game.

I recommend to level a fresh character through the Dragonflight Chromie Time up to lv 70 (thats the intended experience for newcomers)

Typically the best profession to pair with Enchanting is Tailoring, since you craft things you can disenchant with cloth gathered from humanoid enemies

But as a paladin wouldn't benefit much at all from Tailoring, perhaps another gathering profession to supplement your income--or another crafting profession if you have gathering alts to support it

Exactly. You should let the game hold your hand. After completing the Exile's Reach starting tutorial zone, the default leveling content from 10-70 is in Dragonflight content, the Dragon Isles, which the game will take you to. You don't need to overthink it--just follow where the game takes you and quest and complete content as you're exposed to it

All race, class, and spec combinations are viable for all forms of content and the best one is going to be the one you're better at playing and enjoy the most. Death Knights, Demon Hunters, and Evokers are the only classes not recommended for new/inexperienced players solely because they lack a proper starting tutorial experience for the game itself. Experiment with different classes and specs until you find the playstyle that clicks with you the most.
I would recommend looking for a guild or community by advertising yourself as a player while also responding to guild advertisements in the appropriate Looking For Guild channels here in this server, in dedicated LFG servers or the appropriate channels on other community discord servers, using the ingame Guild & Community Finder window, on your realm's Trade and General channels, on the official forums page for your realm, and even on the appropriate sections of raider.io or wowprogress.

Realm transfers are available for purchase, however guild and group membership is available cross-realm. Although, if the character isn't even leveled or geared, it would be more convenient to just roll a new character on a new realm

It would be better for you to just make a new character on a new realm

You still keep all mounts, pets, toys, and appearance collections on your account regardless of what realm you play on

If you pay actual money for a realm transfer for a level 30 character you will regret it later

is posible to use the evoker flying ability without been dismonted at the second I touch the ground? I mean I like the fantasy of flying like a dragon but there is 0 reason to use it if I pick the talent to gather things like I'm mounted but I get dismounted anyways
