Some RPers use addons like Elephant that does allow making 'logs' of RP events and scenes. I use it to assist me in what I call 'Story Mode-ing' my storyline scenes to turn it from a back and forth rp scene into a flowing story. Previously I would take a lot of screenshots and retype everything.

It was exhausting. I'm still not done with some from a year ago and likely will never finish the project.

And yes, my different servers are for different groups of characters and RP partners, creating individual storylines.
