I love the oxbow map but I feel it takes a bit from the experience that the only ones that are aging is me and my villagers in my town. For the quest they can be a 18-30 year quest so we still have the ability to finish them and for the quests that are important for the story can be extra highlighted to make us aware that these are important to the story.

I agree, it feels weird to have them not age at all. At least, in the Valley, they get old with you
If they were to age, the story quests would have to have a time limit. I think it's actually quite good that you can decide for yourself when you do the quests.
true, but in the Valley, the time limit for main quests is about 18 years, I find that reasonable
I mean, in the Valley, every quest is introduced by a previous one, so that you always know what to do next in the jounal. (Or am I remembering this wrong?) In Oxbow you first have to find out/understand which quests are the actual storyline, that you have to search for tasks in all the villages. And you can build up your own village perfectly well without ever having started the story quests. If you then start looking for the piggy after 15 years and then it's 20 years old...
What about letting the people age after completing the story quests?
This makes sense to me. Once the overall main quest is flagged as complete...then remove the anti-aging from the NPCs....if that's even possible
