I've just been using blender for a long time, and am definitely no expert when it comes to making the animations to import, but just general animation videos can help. Don't really have specific tutorials, and there's probably a much better way to do it than how I handle it.
As far as using the Animation Editor in Workbench, also definitely not an expert but referencing the vanilla animation workspaces and looking at the animation bootcamps on the ARMA youtube channel have helped!
I see, is the import process for animations as simple as the model import process, just an FBX drop in? I've got some decent familiarity with blender but I've been curious on the import process for animations. I think there's a channel here that has some tutorials for it but I was curious if you had any specific ones to point to.

Not exactly. You have to use the Enfusion Blender Tools to export as into the proprietary format Enfusion uses. The Weapon creation guide in the Biki covers a decent amount of it!
The bootcamp should also be useful!
