It def can be a pain depending on your setup!
I use a ceramic grill to smoke so its a lot more work than if you have an offset smoker that pretty does all the work itself haha
Yeah, I've got a trager and I've followed all the recipes explicitly and somehow it still doesn't turn out right
What do you not like about the end result? Is it dry or not good enough bark? What is the temp and what method do you do?
Both were problems. The last time I tried it it was dry and tough and the bark wasn't great. I'd have to look up the recipe I used, but it was one of the traeger offical ones so I thought it'd be decent.
Hrmmm. If its too dry you could try wrapping it to help lock in moisture but it affects the bark in a negative way
Just make sure to not wrap too early and don't go by temp but actually make sure your bark is ready. I don't personally like doing the wrap method and will just beat a stall on its own
I'm pretty sure I did the wrap method, I'll probably just need to do more research on a better way to do it.
You can also try the foil boat method. My friends have good success with that
The biggest issues I had were not letting it get to high enough temp to render. I try to maintain around 230f but had much better success at 250f
Yeah, I'll definitely try a different method next time I do brisket. Gonna wait a while before I do that though, heh.

Pork Belly Rice Bowl
Juicy Fatty Pieces of Pork Belly that was on the Grill served with a garlic rice pilaf with baked beans in a smoky BBQ Sauce, banana peppers, cabbage slaws, crispy onion chips and butter cream corn and a chipotle aioli dip.
The Pork belly was REALLY juicy as you take a bite and the juices comes flowing out as you taste the BBQ smokiness of the beans and the cider in the slaw, and the crunch of slightly tangy banana peppers, and crispy onion chips, followed by the rich creaminess of the corn and the salty garlic rice.
Pork belly is probably my favorite meat to smoke, its so tasty. I've been trying to figure out new creative uses for it, most recipes are "Pork Belly + Sauce"
recommend google and looking at the different cuisines and how they use pork belly in dishes and go from there. smoking it in general limits you to a certain extent. if you get a slab of it you can possibliy remove the skin and fry it/roast it similar to lechon kawaili and add it back into your dish to create texture

i understand time limits because it is a competition but they are often pretty limited in terms of what you are allowed to make.. this one was more flexible which is why i liked it

Definitely made me think about the process of cooking to help make my dishes better. A executive chef friend of mine who runs a fine dining place in Scotland recommended it to me

Ingredients:
Vanilla ice cream or whipped cream
3 oz dark spiced rum
2 oz butterscotch schnapps or liqueur
1 bottle cream soda
1 pinch nutmeg
Instructions:
Spoon vanilla ice cream or lightly sweetened whipped cream into two glasses.
Pour the rum and butterscotch schnapps over the cream.
Slowly pour in the cream soda, waiting for the fizz to settle down before adding more.

Never had australian sadly, but if you enjoy licorice make sure to try the scandinavian stuff. They know their licorices

Yep, red licorice is infinitely more popular in the USA than black licorice is. It has a much better flavor and not like the black licorice tastes like a chunk of tar.🤢🤢🤮🤣🤣
I did see a few red licorice pictures of the Salmiak, but still it seems like it's predominantly black version.
There are actually two types of black licorice. One that is sugary with an anise flavor that tastes really good, but another that is bitter with an anise flavor that tastes like chewing on tires. Unfortunately, until you bite into them you have no idea which one you're going to get.

Wife bought some Sichuan Chilli Oil, so I coated a steak in some earlier and left it to sit. Heated up the frying pan, took steak and put it in pan, and choked on chilli oil smoke.

Just my favorite after work meal. I call it The Lazy Bowl. Seasoned rice with veggies (broccoli, onion, green beans, and mushrooms), bacon, a couple hash brown patties, and a runny egg on top. Lots of protein and the oven does most of the work xD
Lazy because pretty much everything is just "set a timer". The bacon and hasbrowns go in the same oven pan on the same temp for the same amount of time, and the rice/veggies basically cooks itself. All you're really doing is frying an egg xD

My 'easy meal' is egg + bacon english muffin sandwiches. I've got it down to such a science that it takes zero brain effort to make
WIth prep its so easy. Chop up the veggies and freeze them in bags ahead of time. then throw them in the bowl with the rice and microwave. Put parchment paper down under the bacon and hash brown and you don't even need to wash the baking sheet. It's literally just fry an egg and wash the pan xD

First attempt at home made pizza dough. Crust tasted fine but there was way too much of it lol.
2nd attempt at home made pizza dough. This ones way thinner and the crust is comically huge. But tastes good.
Tried to make thinner peperoni with the food processor and the meat got mangled lol.
i make homemade pizza as well and found that if you break the dough into two equal halves and then cook it in a steel pan then the crust comes out great and it's similar to a nyc style pizza.

then i used cornmill artizan bread, butter and garlic, the carmalized onions from the slow cook, sweet relish, spicy mustered, 4 pieces of provalone, and 1lb of tritip deepcut. and the slow cook sause for dipping.

I've sprained both knees, one of them twice. Etc etc. But there are other ways to remain active.
I'm pretty sure my meniscus tore. It still hurts to do stuff years later and re-swells if it's pushed too hard. I couldn't even walk without pain for 1.5 years, and going up and down stairs can still get to me.

Honestly, I just like to cook it myself. A good steak from costco with a decent seasoning and reverse sear is better than most high end steakhouses.
I like mine well-done, so I cook it slow.
Yeah my partner does as well. Reverse sear is the beat of both worlds: cook low and slow so that its done all the way through, then sear it at high heat to get a good crust.
As someone who consumes wagyu as their main source of beef. I enjoy it quite a lot
The marbling is great. Im not sure I would eat A5 multiple times a week anymore but I eat Australian wagyu a couple times a week. Picanha is my fav cut of it or Denver cuts
The rendering of the fat is just so good and its better fat
I just get a picanha roast and cut them into 1.5" - 2" steaks
I do this if I want to be lazy. My fav method is a very hot sear and then butter baste till finish flipping every 30 seconds.

Yeah, I used to have a charcoal grill and never liked using it because it was old and I had trouble getting the temps right and stuff, so I basically never grilled. The pellet grill making things easy means I can grill all the time with minimal effort and thats great

There was a place near us when we were living in CA that did Bulgogi sandwiches where they do white rice in the shape of hashbrowns (like you get with McD breakfasts), fry it so they stick together, then put one on top and bottom. So you get some really yummy white rice on top and bottom, and then delicious Bulgogi in the center. Best kind of sammich.

It's rice seasoned with spices that makes it turn yellowish, making it look "dirty". In this case it's cumin, garlic powder, onion powder, salt, pepper, and ground dried ancho chilies
Oh, and if you're doing a proper western cookout, use lard. Just a tablespoon for a pot of rice makes the flavor correct xD
Don't use canola or vegetable oil or even butter, the real flavor comes from lard
It's really the secret for most Mexican cooking I've learned. If you've ever wondered why the stuff you cook at home doesn't quite taste like that really good restaurant, lard is the answer
It's not even really complex, just use it like you would use butter. Would you put a teaspoon of butter in that? Put a teaspoon of lard instead
It's all fat it's just a matter of flavor. Like, lard gets a really bad rap and rightfully so, but it's really no worse than any other animal fat
