The demo had a simple area compared to the more dynamic, larger and more complex environments scene in actual gameplay. In terms of content there are far more weapons and a bit more armor, and a means of selecting exactly how you want to look/play with weapon customization and loadouts and whatnot.
I can understand that you're unhappy with the performance, and maybe even the fact that the gameplay loop is still widely the same, but the game is absolutely packed with more content than the demo
