bring a blunt weapon, hit them in the head untill they drop, once theyre on the ground you can go up to them and rip pieces of armor off of them, i suggest taking off their helmet or chestpiece and that gives you a pretty big window for a killing blow, i suggest keeping a top spike on whatever blunt weapon you're using so you can stab them once you take off their plate
