Whenever I dodge their first attack they just swing a second time and kill me in one shot. He’s the first boss with a proper sword and not a polearm so I can’t just bum rush him which has been my strategy up to this point

I find them super easy to use just requires practice, as for countering them you need to take advantage of the fact that once you bypass the form they are useless in enemy hands if you maintain close proximity I always tell people to look to see if they are holding the pitchfork or polearm left to right or right to left to understand which way they will be thrusting or swinging to go the opposite way and use active deflection as a redundancy. To better understand using pitchforks or polearms it's best to just get used to developing muscle memory with both half grip thrusting and full
