Yeah, would be nice to be able to customize that more, you can kinda do that now by decreasing the damage to NPCs, so they'll take more of a beating before giving up
Or you can use the enhancer mod to make then into zombies pretty much, they'll keep going without legs and arms

biggest thing to practise is aiming and only really attacking when your enemy is open/cant attack you. best to wait for them to swing and miss before moving in and attacking, especially if your weapons is shorter than theirs
