Greatsword is great for knight fights actually, thats what i mainly use in them. It has weight, so if you halfsword it, the pummel can be super strong. Even slapping them across the face with a clean swipe can knock dudes out. Hard to do that though.
On top of all that, you can get lucky and hit an unarmored part which cant be done with maces.

cant say anything for the lock-on strenght part, i dont know enough to give advice. but for mouse sens i personally run 800 dpi desktop settings, and ingame is set quite low, not minimum but no more than 1/4 from the left

it depends how you use the mouse too, i remember having a convo with someone who moves the mouse with their fingertips, but mostly stationary wrist and they run higher dpi for that reason, i at least aim from the elbow if not shoulder so lower dpi+larger mouse movements

Your mouse is directly connected to your hands. Control your hands, not your weapon. Take some time to just move your weapon around, experiment with how the animation changes at different positions, and how the weight of the weapon affects the hands. Use the greatsword to get used to the physics, your top hand is used to generate power, your bottom hand is used for aiming and precision, notice how the sword rotates around your bottom hand. Focus on moving the top hand with the mouse, then focus on moving the bottom hand, eventually you’ll learn how to use them together.

hop in halfsword and just mess around with the ingame sensitivity, what your looking for is to be able to gain full speed in a swing while retaining precise arm movements
if its too low you wont get good swing speed, if its too high youll still be kinda flaily and all over the place

I have a....not exactly glitch, but somehow when I quit one time it saved a much earlier tier thing
So if I forget to go into free mode, my completed run for the challenge mode means I go right into the Baron with a militia grade fighter using a breastplate and glaive. It's very satisfying to beat him with an undertier character like that but man it takes ages bc the glaive doesn't have the weight in the head to really do concussive force against the helmet so it takes a bajillion hits to take him down, but it's good for keeping out of range and wearing his weapons out of his hands
