first one is like a control panel for the game, second is a loadout saver and selector

well, the AI is random, and plenty of them don't actually put up a fight themselves, you'd basically just be putting yourself at a needless disadvantage to parry an attack that wasn't gonna land anyway, which will more likely result in a frustrating bullshit defeat than a blood sweat and tears hard fought victory.
as soon as you fight with honor and at the level of the average npc you die immediately when one of them doesn't have honor and is competent

If you are unable to find a candle stick or anything viable for parrying, try to run in circles just slightly in range of his attacks. When he attacks, avoid it and run into him and repeat the same thing.

Does anyone have any tips on how to be more accurate with stabbing between armour while halfswording? At higher man at arms and knight I rely mostly on blunt/polearms to bonk the enemy on the head. I'd like to more reliable be able to fight armoured opponents with a sword but halfswording to get inbetween the armour feels like im just wiggle the sword in the hopes that Ill get a stab in.

Depends if you're staying in the offensive moveset (moving too fast) or not. I find its only helpful if you're parrying only otherwise just a waste of time and confuses the mind if you're not used to the flipped attack patterns.
