I honestly don't really like the bosses, it feels like the attack windows you get are incredibly small and they can only be beaten with cheesin and some luck

Which is why I also really like the first axe boss, he gives a few really nice attack windows whilst also punishing you really hard for even the smallest of fuck ups

for bosses with blunt weapons like maces or axes, I find it easier to just have them miss a swing and then run right up to them so they have a harder time swinging again

Some are somewhat easy, some are harder

I personally mostly struggled with the 3rd boss because he swings a heavy ass instakill sword like a maniac, tho you can probably get a good stab in at the start
