The main problem seems to be when I detach the two side boosters, and lean it too far.
I think it’s because the weight is too far down

if you slightly tip over
you have wayy more drag on the top than on the bottom
so it flips
put a lot of fins on the bottom

First one is at 300
if you unlock fairings dont worry about center of mass
remove the radiators and anything unnecessary

i dont even think you need 2.5 meter parts
so
you should put
your capsule + parachutes + heatshield
then add a decoupler
then put your science stuff and your orbiter engine

you should only bring down the capsule with a heat shield

if you go on eva
you can collect data
meaning you bring the science back into the capsule
it also means you can run your barometer and thermometer more than once
but mystery goo and science jr requires a scientist on eva to reset

So ideally you want the centre of mass to be higher than the centre of pressure
This means long, thin rockets are generally better than short, girthy rockets
What id do here is ditch the 2.5 m parts, make the booster stage a longer 1.25 m state and add more of the Soyuz style boosters, maybe four

you can just add more of the smaller parts if you don't have the long ones
