i launched the game once and all of my parts vanished with no return even the stock rockets are broken

Validate your local game files? Looks like a corrupted install, the GameData/Squad folder getting deleted, etc.

That, or you're playing career/science mode and you haven't unlocked the relevant techs yet.

The vast majority of parts are going to be locked, probably including all the stock vessels.

is it like it in sandbox you say? if so then you are 100% missing files

right click on KSP in steam > Properties > local files > verify integrity

then let it do its thing
