The stock readout is trashy at that high vaules . Use ker or mech jeb
also don't forget to switch the VAB readout from the default atmo to vacuum
for that there's a button called DeltaV Tools in the bottom right in the VAB
I still can’t get the antimatter engines to have any dv but I got the nuclear salt engines to work

just tried it, works for me. initially it showed up only in KER but after a bit of moving parts around it showed up in stock too. Are you using the correct fuel? Does the engine actually work once you're in space?

for interstellar you'll need millions of dV to get there in a reasonable time so you'll need a lot of fuel
millions is a bit much depending on the system. but at least 500k for the closet systems
I only had two tanks of antimatter
the dv should be showen even wit that ammount
It does but only like 200 dv
I built a different spaceship with 400k dv
So I know it can handle big numbers

on the frisbee antimatter engine you can make it really long... the longest config is like 120 meters and doesn't need radiators.
Also I recommend that you install Heat Control to get bigger radiators
