I get booted back to GDM. This shows up in dmesg:

Ok, I'll disable all except Dash to Dock for a bit

I just woke my computer again (I hadn't turned off my extensions yet) and it crashed, but before I was back in GDM, I saw some errors referencing Bluetooth. I had some Bluetooth headphones connected, so I will see if disabling Bluetooth Quick Connect (and the others) will help.

I was able to reproduce the crashes (I still hadn't turned off the extensions) by suspending my computer with the headphones connected, and GNOME consistently crashed. I then disabled extensions, and it no longer crashed. After enabling all my extensions again, I could no longer reproduce the issue.

Then Bluetooth Quick Connect probably has some bug that causes this.

Strange that I could not reproduce it again, though.

ah, ok. I'll mark the issue as solved for now.
