You specify that with lua code. eg:

local blip = AddBlipForCoord(
        x --[[ number ]], 
        y --[[ number ]], 
        z --[[ number ]]
    )
SetBlipSprite(
    blip --[[ Blip ]], 
    spriteId --[[ integer ]] -- Here you specify the spriteId what you changed in the blipSpriteSheet
)
