It would be great to be given an option on which door we want the jetway to connect to (e.g. Door L2 on large jetliners such as the Boeing 787 or upcoming 777)

I believe it's a game jetway limitation as we had that in P3D with SODE

GSX doesn't have any control on the jetways, it uses the MSFS default system, which connects the jetway where it want's, with no control possible by 3rd party apps.

@cerulean prairie do you consider to develop a custom jetway animation system like you had with SODE in P3D? I think especially when the twin aisle aircraft come to the market, there will also be a demand to be able to connect two or three jetways

It is surely dumb but, of course, we are waiting to be sure it won't be improved in MSFS 2024, before even considering starting a replacement.
