Essentially, if you're looking for other people to work with on some cool projects, feel free to, but don't post solely to advertise a product/service or hire people

Depends, if you have a clear idea of what you want to do you should probably ask in the respective channels
For instance if you're planning on making an Android app
You might want to ask in the #android channel, you would be more likely to find interested people there :>
But if you're trying to find ideas I would personally recommend #general :)

I *personally* think it's best, because if there was a channel only for projects, people may not read the messages there if they are all about a technology they don't know / like
(for instance if you're an Android dev and 90% of the messages were about Web projects... you might not look into the channel as much ahah)

I suppose it's a balancing act though as by integrating then into current channels, they run the risk of being drowned out by other chatter related to the channel.

Though I feel like there would be more messages in a single projects channels for all the categories, than on a category channel 🤔

I also agree. If collaboration then I think I should be welcomed but about hiring or head-hunting still should be prohibited.
