In the folder "plugins/ModelEngine" you should have a "resource pack.zip". Apply this to your Minecraft client to see the models, the items and the icons.

How can I set this up for my hosted server, I don't fully understand how to set this up, for both client and server sided

You can either use a force pack plugin, or something like ItemsAdder or Oraxen, or put the resource pack in server.properties

The only thing I know how to do is add a resourse pack to my own minecraft on my PC
