When can I get my first mount?
The quest that allows you to use mounts, 
''My Little Chocobo'', is unlocked by completing the level 20 main story quest

Are there any differences between mounts?
Some mounts allow multiple people (2/4/8) to ride at once, with all mounts having the same movement speed. A partial exception to this rule is the SDS Fenrir, a mount from the Mog Station. The SDS Fenrir acts as if you have the first mount speed boost obtained from completing specific quests in the story, making it a bit faster than other mounts, but only until completing the relevant story quests for that zone.
Can I make my mount faster?
Zones have one or two ranks of mount speed that increase the ground speed of mounts. The first rank comes from completing specific quests in the main scenario quests, with the second rank coming from Riding Maps which are bought with either Allied Seals, Centurio Seals, or Bicolor Gemstones. Mount Speed Boosts do not increase the flying speed of mounts.

Hi I'm currently playing post shadowbringers content and wondering is there any specific content I should be doing or is best to do before I get to and finish 5.3, I've done the first group of Eden raids and aim to do the second group and I've done the two optional dungeons, there's a blue quest for the weapons which I was planning to leave until after 5.3 which seems ok to do after?anything else I'm missing or should do alongside where I'm at?

LW mostly uses skins from enemies, but still requires metal, cloth or potions from time to time. Everything feeds into each other as usual.

Yep, between 5.3 and 5.4 is a very natural point to take a break and do some side stories.
