they have a chance to proc stone and fire, and then you replace jolt with those since they're also incidentally shortcasts with more damage / mana

its just easier to push to 51 to get vendor gear
since that gear on scrip is not universal and crafting the universal ARR set is generally a bit of a pain unless you find it cheap on mb/someone to craft it for you

That would be up to you. The upgrade from the level 60 job gear would only be 15 more ilvl. If your accessories are much lower (since the dancer quest doesn't provide them) then I would at least get those.

Quick clarification: do you mean level or item level?
The answer is generally the same either way—you want the one with better stats—but if it's just level then higher item level always wins out (except in super niche, very rare endgame situations), and if it's the same item level then you start looking at things like crit/dh/det/etc.

Surveillance is loot quality AKA more rare loot
Retrieval is loot quantity AKA how much they get
Range is how far/many sectors they can do in a single trip

Additionally, there are often markers built into the arena floor by the developers, and if you can spot them and figure out how to use them then you can significantly decrease your dependence on waypoint markers.
And in any fight with multiple phases, you can adjust markers if you wish because you're not in combat until you pull the new phase boss.

If you really want an external map, https://www.thegamer.com/final-fantasy-14-xiv-every-aether-current-guide/ has up-to-date maps and coordinates.
They're not 100% precise (especially the map) so you might still need to aether compass near the location. The quest current list is also pretty meh.

To some extent it’s about killing. You have to play around the objective and not just tunnel it

I mean, it is about killing, as well. Tying up enemy players off-point is an effective strategy if you can maintain and they're morons for not disengaging. But it's also equally viable to attempt to stagger the enemy team's respawns out so that their ability to contest point is limited to charging in and slamming Guard, and if you can disrupt that and not lose any of your own, then you have easy pushing.

Summoner, for example, can do devastating area damage with summons, so if/when you see the LB going out, making that player a priority target is the fastest way to get Bahamut off the field.
But as a Summoner, being aware that you're making yourself a target will let you start looking for good timings to throw LBs out—like outside of enemy burst windows (which you can start to sense a pattern to) or with enough team cover.

To be able to purchase elemental armour, you'll need to make it to Pyros, have your Pagos weapon and unlock 50 logogram actions
To upgrade it to elemental armour +1 and get the different coloured glow, you need to reach Hydatos, have your eureka weapon upgraded to at least a Pyros weapon, and unlock all the remaining logogram actions

Hunting log will give you decent exp to start. It shouldn't take too long to reach level 15 to start running dungeons. All jobs lower level than your highest get an innate +100% exp bonus. Makes it easy to level alt classes.
