based on current crafting BiS CP VII is used a LOT
both rings and all tools as the final meld slot, so you go through it quickly
as for gathering, all three types of V are relevant, though perception V is used slightly more
oh CP VII is also used in fourth slot of the other jewelry for crafters
so it's used on every piece but armor slots

It's not as long as it used to be, though. A decent chunk of the ARR MSQ got streamlined a few patches before the current expansion, to cut out the bloat and some of the more pointless back-and-forth fetch quests.

Likely not presets. Most people use those for floor marker setups for current-tier high-end content or things they regularly farm.
You only have a limited number of presets, so keeping a preset around for every piece of content in the game is impossible.
