I actually didn't skip all of them, either. Different races/genders have differing facial expressions, and it makes for a neat alternate look sometimes.
Like, my femra is typically way more facially emotive than my male elezen, so I get a lot of good looks from her, but every now and then he has an expression that's just perfect.

The only way you can possibly be level 1 having just started the game is if you don't even complete the first quest you're forced to do.

But yeah, I'm used to redoing campaigns on alts from playing other MMOs, where you have to do that if you want to play a new class.
Here, the only reasons to make alts are for flavor, really, like if you're into RP, or (like me) you just want to explore different race appearances and don't want to use fantasias constantly; or if you want to play with people on different datacenters/in different regions, which will also become unnecessary in the future (at least possibly, as far as regions are concerned).

It’s RNG whether transmutation upgrades a materia, and more RNG that it’ll be something you want

So any mixture of 9s and 10s will likely give a 9, with a small chance to give a 10

The non-blue side quests in a region tend to have a lot of info about the region. They don't give anywhere near relevant experience, so they're not good for leveling, but if you're interested in the area lore, they can be engaging.

level 90 really depends on the pace you take to progress story, if you steamroll it you'll probably reach it in less than 250h
for my personal one i have over 600 hours yet im only at the start of Shadowbringers (level 70) because i get distracted with side content a lot, which honestly you should do some before Endwalker as recommended by people anyway
