so you prioritize maxing out which one's better

That's Rested Experience, which is an extra source of bonus experience shared between all of your classes. You gradually earn this while inside a sanctuary (town or area with a major aetheryte), regardless of whether you're online or not. Sanctuaries are also indicated with a crescent moon icon near your experience bar.

'How much of a boost is it?'

The most amount of rested experience you can have at once is one and a half levels of experience. That means that lower level jobs use up the rested experience faster than higher level jobs do.

i did something super neat for my gpose. I wanted to pose in front of a waterfall, but have her look at it, and lo and behold there's a targetable obect to her left. I had her target it and her face moved to look at it and framed perfect for the screencap

You can make your character face the camera with space bar

Using that and then turning the camera you can manually make your char face anywhere regardless of targetable objects
