Typically Job Quests are contained within their expansions separately. If you have not reached the next expansion in , you need to continue the main story quests until you reach the next expansion, denoted by giant letters naming said expansion.

On Friday, assuming you have EW unlocked, you turn your current book on the job you want the exp for. Then you pick up a new book, quickly unsync the extremes or whatever with a level 80 job, get it ready to turn in again. Switch back to job you want exp for, then turn it in on that same day.
