I really want to start playing but I am quite a bit confused about how to purchase the game.
So in Wow all I had to do is to buy the sub and the latest expansion and I got access to everything before that. How does it work in 14? Should I wait for endwalker and get the complete pack? Are the old expansions even relevant?

The main thing I loved to do in wow was raiding and collecting transmogs and mounts, can I do this in 14?
I really liked collecting old armor and customize my character in WoW because I could play all the old raids and dungeons alone and one shot pretty much everything making it a very relaxing and fun process. Is this any different in 14?

You have to play through the MSQ of old expansions to get to the new ones, so in a sense they are always relevant

1. this game has a mandatory main story that goes through all of the expansions, so yes they are relevant. You get all of them when you buy ew, regardless of what version.
2. Yes, you can do that. But they're role restricted.
3. You can't really blaze through much content that has "good" glamours solo (glamour is transmog in this game) like you could in wow, for many you still need other players to do it with you.

there's weekly lockouts and if you don't get a piece from your weekly chest you're out of luck, but you get pity tokens that evnetually guarantee you a piece

I could redeem the early access stuff and received my reward, but would it affect anything else on release? I'm just afraid I won't be able to play the early access once it drops. The first FATE in the Tojil chain is the one that’s timelocked, since all the Tojil fates directly/immediately follow up the previous one.

You might need to do other fates in the area that have those Viis hunters, but I can’t tell you for sure.
