The fight is very damage-intensive due to the debuffs.
If you’re doing it at 70 or so it’s hard to stay alive without self-sustain

Yes. The intended purpose of the plug-in is to let people with bad ping to double-weave without clipping, but it can be easily abused/adjusted to allow impossible things to happen like the example I gave.
There’s another plug-in that does the same thing, but without the possibility of abuse.

Bots are always less useful than real players... usually....
However, Trusts have shorter queues (0 seconds lol), and the NPCs actually have commentary as you're running the dungeon. So it might be pretty immersive if you bring a specific NPC into a dungeon they're likely to have some interesting dialogs (e.g. The first ShB dungeon with Alisaie)
