Currently you only have two datacenters to choose from; Aether as a whole is Congested, and new characters cannot be created on any of the servers in it.

Other than that, all the datacenters are in the same physical location, so you'll get the same ping regardless which one you pick. If you have any friends playing the game already, I'd try to get on one of their servers. Otherwise, there's really no major differences, aside from meme impressions.

If it's not a Preferred world then it'll be normal. Creating a character on a Preferred server gives you a buff called Road To 70, which dramatically increases your combat experience gain as long as you're on a class that isn't yet level 70.

SAM or DRG is probably the simplest, but they're all pretty approachable. I would say NIN is the most complex, and MNK is about middle-of-the-road

Dragoon is probably one of the easiest jobs to pick up. Where you don't feel like you really must read a guide to squeeze the most out of it. Just read your tooltips and you're fine. Some jobs feel much more like an exam before you figure them out. Dragoon is more "poke with stick, ok?"
