Up to you, the HW jobs (DRK, AST, MCH) start at level 30 instead of 1so if you were thinking about one of them, would be a fine time to catch them up to 50.
Often people dont like "wasting" MSQ EXP and theres enough between MSQ and roulettes to level two jobs, roughly.

Only you can tell that, probably - its different for everyone.
Try looking at all your skills up to 80 in Actions menu, also a level 80 MNK guide on youtube to see if you like the flow, or even the Endwalker Job Action trailer to see if you like the upcoming MNK. But in general its not "too different" after 50

from what little i know of crafting rotations, ive just done: apply buffs at the very start, increase progress if the thing is normal/poor condition until you cant increase progress without finishing, increase quality on good/excellent unless youre one progress action away from completion

Xpac MSQ with their Job quests within that expansion. For now, players wont be able to start the HW questline of their job UNTIL they beat ARR for example, even if they've been level 50 for a week - its tied to MSQ progression heavily
