Just mess around with it, the settings you change ingame instantly apply, so it's easy to test.

If you wanna heal from the start, Conjurer (later becomes White Mage) is the only healer you can start with. But to be honest, you might find them pretty basic at the start. Like, all classes are basic when you're at very low level, but I think conjurer more than most. Another option for you might look at would be starting as Arcanist. It starts as DPS, but at level 30, it splits into Scholar (healer) and Summoner (DPS). Levelling either of those levels the other too, so you have two to pick from if you get bored with one, on the way to dancer.

it has a slight benefit of having a mount speed boost on the ground and you have none unlocked so it'd be useful for alts i guess

but after a certain point it gains no inherent advantage because flight is faster and not applicable to the speed boost
