It's RNG, but if it's a leveling dungeon, if you have all of the other pieces for that class and you're playing as that class, you'll get it 100%

WHM feel like holy priests and AST feel like resto druids. SCH is pretty special because nothing in WoW really compares to it; your fairy minion will do a good part of the healing for you passively, your job will be to do damage and supplement fairy heals when things get dicey. Maybe closest is Disc Priest, as your fairy will be healing while you dish out damage, but it's a stretch of a comparison.

When can I get my first mount?
The quest that allows you to use mounts, 
''My Little Chocobo'', is unlocked by completing the level 20 main story quest ''The Company You Keep''. The quest is located at the Grand Company base you chose, and you'll need to buy a Chocobo Issuance from your Grand Company Quartermaster. You can get the 200 required Grand Company seals by doing the main story quest that comes immediately after ''The Company You Keep''.
Are there any differences between mounts?
Some mounts allow multiple people (2/4/8) to ride at once, with all mounts having the same movement speed. A partial exception to this rule is the SDS Fenrir, a mount from the Mog Station. The SDS Fenrir acts as if you have the first mount speed boost obtained from completing specific quests in the story, making it a bit faster than other mounts, but only until completing the relevant story quests for that zone.
Can I make my mount faster?
Zones have one or two ranks of mount speed that increase the ground speed of mounts. The first rank comes from completing specific quests in the main scenario quests, with the second rank coming from Riding Maps which are bought with either Allied Seals, Centurio Seals, or Bicolor Gemstones. Mount Speed Boosts do not increase the flying speed of mounts.

Annnnnd I'm playing WHM lvl 35, currently i have Cure and Cure II bound, as we get higher ranks of spells is it best to keep all the lower ones bound too?
