How do I get Grand Company Seals?

Once you are Sergeant 2nd Class you can turn in Pink/Green/Blue-rarity gear in exchange for more seals.

Pretty sure they're the same. You have combat classes for fighting, crafting classes (for instance, smiting) and "collecting" classes like mining. Each of them have separate exp but you can be whatever you want on the same character. You just need to swap your main hand after unlocking the class.
