It doesn't sounds like you're that far into the game. And it'd be nice for them to play through the content with you, instead of catching up to you. IMO.

But as stated, Primal/Aether are the bigger raiding servers so if that's your main focus perhaps stay on Primal.

yea the job gear is just from completing your job quest at 50/60/70/80. if you want more powerful gear (aka poetics gear) you unlock the vendors at different parts, but from stormblood onwards it requires you to complete the base expansion msq

in ARR and HW the vendors unlock when you have access to Mor Dhona and Idyllshire respectively, not requiring msq completion

depends on how confident you are on picking things up. if you want a slow learning curve, pick a level 1 tank. if you can read a guide and be able to pick things up fairly quickly, starting with DRK or even GNB isnt so bad. id say maybe not GNB tho
