Anything, its the same as inventory/retainer space so up to you! Something you might want to keep around in the overworld. Materia, food, whatever! For the animal drops, they are used for Crafting so keep them if you think you'll need them (or you can sell them to an NPC theyre super cheap, either or)

yes, that is correct, which is why I recommend doing daily roulettes as your alt class and MSQ onl your main
