Just set them to combat classes, unless there are specific mats you want to get for crafting. You'll generally be doing quick ventures with them anyway which can be done on any retainer class.

combat retainers are versatile, they also gather monster mats, which are more troublesome to gather, the other stuff your MC gatherer can do better generally.
